Sometimes you just want a nice easy salad for lunch, am I right? (Especially if you’re still trying to get back on track after that week in all-inclusive food & drink heaven like I am.)
I admit, I usually like the idea of eating leafy green salads a lot better than I actually like eating them. So often, they just fall short of my expectations. It seems like most salads are either horribly tasteless and boring, or else they’re really complicated to make and probably lose most of the nutritional value thanks to added toppings that are just plain old bad for you.
But I have good news, friends! This salad is like the best of both worlds: it doesn’t taste like rabbit food, and it’s super quick and easy to throw together. SCORE.
This particular salad is packed with energy-filled foods like quinoa and spinach. (Um, I’m no dietitian, but I do know that those are both on the “yes, you should eat more of those” lists.) But it also has a few extra little treats like grapes and goat cheese. You know, just to keep things interesting.
The grapes add a little tart and tangy bite that contrasts with the creamy goat cheese crumbles. And of course, you should throw in a little handful of sunflower seeds too. Crunchy stuff on a salad is good.
I topped this salad with a pre-made champagne vinaigrette dressing that I bought at the grocery store, but you could also make your own dressing if you’re so inclined.
- 2 cups spinach
- 1/4 cup grapes halved
- 1/4 cup cooked quinoa
- 1/4 cup goat cheese crumbles
- 1 tablespoon sunflower seeds
- Champagne vinaigrette dressing

toss all ingredients together and drizzle with champagne vinaigrette dressing
