  • 1 slice of bacon chopped
  • 1 rib celery chopped fine
  • 1 small onion chopped fine
  • 1 green pepper chopped fine (be sure to remove the stem and seeds before you chop it!)
  • 1 clove minced garlic
  • 1 1/2 teaspoon cajun seasoning
  • 4 cups water
  • 2 cups chicken broth
  • 4 oz andouille sausage sliced

  2. Stir in the celery, onion and green pepper and cook until the vegetables are softened, about 5 minutes
  3. Add the garlic and cajun seasoning and give it a quick stir. Stir in the beans, water and broth, and simmer for about 45 minutes. Stir frequently.
