Blueberry Yogurt Smoothie

Hi, my name is Jen and I ate churros and bacon for breakfast every single day for a whole week.

Kevin and I just got home from a week in Playa del Carmen, where we stayed at a lovely all-inclusive resort. It was our first time doing the all-inclusive thing, and we were totally unprepared for the nonstop parade of food and drinks that would be involved. Don’t get me wrong, it was super rad. But oh my god did we consume an obscene amount of calories, followed by a whoooole lot of lounging around.

So upon our return, I was jonesin’ for something a little less deep fried and alcohol-soaked, and a little more nutritious.

Enter my go-to blueberry smoothie.

Blueberry Yogurt Smoothie

This blueberry smoothie is my favorite breakfast or snack that sort of tastes like a treat, but is full of all kinds of things that are actually good for you. It gives you energy, rather than draining your energy. Imagine that!

Plus, it’s EASY. Like, just dump a bunch of stuff into a blender, push a button and call it a day.

When I make my smoothies, I usually add frozen blueberries, a banana, some greek yogurt, a dash of honey, water, and a handful of spinach for good measure. (You can’t taste the spinach, I swear! Even the veggie-hating Kevin will drink my smoothies, spinach and all.)

And now I feel like going on vacation again.

Ingredients
  • 1/2 cup frozen blueberries
  • 1/2 cup plain greek yogurt
  • 1 banana
  • 1 cup water
  • teaspoon of honey (for a little extra sweetness if you'd like)
  • a handful of spinach
Instructions
  1. Toss all ingredients into a blender and blend until smooth.
  2. If you like your smoothie a little thicker, add less water and add a little ice to the blender instead. If you like it on the more liquid side, add more water.
